I've tested this on two additional servers and I'm happy to say it
works fine, so, I'm beginning to believe it is an issue with this one
server (and not specifically the FTP service as I installed the exact
same FTP service on another server and it worked fine there).

That said, there must be a workaround as other ftp clients are able to
delete the file just fine...

Logging this as an open issue in my own system and moving on.
