How are you viewing this man page? This sentence is complete in ver. 7.21.5
& git HEAD, and in the --manual output in 7.21.5:

$ curl --manual |grep -A 2 progress-bar
       -#/--progress-bar
              Make curl display progress information as a progress bar
instead
              of the default statistics.

This doesn't look like a curl problem. If the man page is truncated in
Ubuntu, then you should file a bug with Ubuntu to have it fixed there.
